Chicken Feta Pasta

Servings: 4

What you need:

· 2 tbsp extra virgin olive oil

· 2 lbs boneless, skinless chicken breasts, cut in half

· 2 14-oz cans of Italian diced tomatoes

· 1 lb whole wheat fettucine pasta

· 4 oz crumbled

What to do:

In a large saucepan over medium high, heat the olive oil then add in the chicken. Season with salt and pepper if desired. Cook the chicken for 8 minutes on one side, flip over and cook the other side for 5 minutes.

Add in the diced tomatoes and 2 cups of water. Stir in the uncooked pasta and cook without the lid for 5 minutes. Cover and cook for another 10 minutes.

Remove the lid and add the feta and stir.

Serve warm.
